Candice's power of illusion works in such a way that an illusion created often enough can become subconscious, and so require no conscious control to create it. None. + When Niki knocks her unconscious in How To Stop An Exploding Man, the illusions of Jessica and Micah disappear, but Candice herself remains in her "slim" form rather than reverting to the original form seen in Betty.
This could simply be a writing inconsistency - maybe it hadn't been decided at that point that Candice was not in her original form - or a casting inconsistency - maybe the producers didn't want to cast another actress just to play Candice's unconscious body.
Having a different actress to fall would have confused viewers who thought that Candice's "slim" form was her true self. If she changed into a different person, people may have presumed that the woman pretending to be Jessica was not Candice. Also, Candice had already revealed her obeseity to Micah when he says "I have a cousin who eats like you, he's huge!" She replies: "So am I", implying that it is unlikely to be a writing/casting inconsistenty given that her true form was already decided.

+ Future Sylar in Five Years Gone is able to fly and phase while holding the illusion of him being Nathan.

Candice's power of illusion works using a form of telekinesis. None. It affects all the five senses.
